KEY LIME PIE

Ingredients:

  • 1 package Morinaga Silken Tofu - Lite Firm or Firm

    8 oz. low-fat cream cheese or vegan cream cheese

    1/2 cup key lime juice or regular lime juice

    2 tsp. grated lime rind

    2 packages Mori-Nu Mates Vanilla Pudding Mix

    1 Tbsp. honey or sweetener of choice

    1 graham cracker pie shell

Preparation:

Drain excess water from tofu. Blend tofu with lime juice in a food processor until completely creamy and smooth. Add the rest of ingredients; re-blend until smooth. Pour mixture into a pie shell and chill for 2-3 hours.
