Caleña Tofu Salad Dressing

YIELD: 2 servings

INGREDIENTS


DRESSING

  • 1 package Mori-Nu Silken Tofu Soft

  • 1/3 cup ketchup

  • 1/4 cup cilantro, chopped (optional)

  • 2 tbsp lemon juice

  • 1 tbsp maple syrup

  • 1/2 tsp paprika

  • 1/4 tsp black pepper

  • 1/4 tsp sea salt, plus a pinch or to taste

  • 4 jarred jalapeño slices. chopped (optional)


SALAD

  • 1 head romaine lettuce, cut in half, grilled

  • 1/2 cup shelled edamame, cooked according to package directions, divided

  • 6 mango slices, divided

  • 1/2 cup avocado, peeled and diced, divided

  • 1/2 cup cucumbers, sliced, divided

  • 1/2 cup jicama, peeled and sliced into sticks, divided

INSTRUCTIONS


  1. In a blender add tofu; blend until smooth. Add remaining dressing ingredients except for the jalapeño; blend until ingredients are well combine which should 30 seconds to a minute depending your blender. Pour mixture in a bowl, add the jalapeño. On 2 serving plates, add romaine lettuce, edamame. Mango, avocado, cucumbers and jicama. Serve.
