Matcha Tofu Protein Bowl
YIELD: 2 cups
INGREDIENTS
SMOOTHIE
1/2 box Mori-Nu Silken Tofu Lite Firm (refrigerate remaining tofu)
2 bananas, peeled, sliced, frozen
1 cup fresh spinach, packed
1/2 cup coconut cream, frozen into ice cubes
2 tsp matcha green tea powder
TOPPINGS
1/2 pitaya, scooped into balls
2 tbsp blueberries
1/2 tsp granola
1/2 tsp shredded coconut
1/2 tsp hemp seeds
A few mint leaves (optional garnish)
INSTRUCTIONS
In a high-powered blender, add all smoothie ingredients then blend until smooth, scraping down sides as needed.
Pour smoothie into a bowl and add toppings.
