Tofu Hot Pot Soup

YIELD: 5-7 cups including broth

Whether you call it hot pot, shabu shabu, or one of the other various names for this cozy and comforting meal, it's sure to be an eating experience that brings together family and friends. Our hot pot recipe is fully customizable with your favorite flavors, whether it be a spicy broth, a tangy sauce, or a handful of mushrooms for umami. Just add our Super Soft tofu to complete the experience and enjoy a bowlful of warmth in good company!

INGREDIENTS


  • 1 box Mori-Nu Silken Tofu Super Soft

  • 1 packet of hot pot soup base of choice

  • 2-3 cups water for soup base (adjust per instructions on packet)

  • 2-3 cups assorted vegetables

  • Red chilies (optional)

  • Dipping sauces of choice


SUGGESTED VEGETABLES & ADD-INS

  • Bok choy

  • Napa cabbage

  • Mushrooms (e.g., shiitake, enoki, beech)

  • Daikon radish

  • Green onions

  • Carrots

  • Lotus root

  • Noodles

  • Others of your choice!

INSTRUCTIONS


  1. In a large hot pot set in the middle of the table, prepare hot pot soup base according to packet instructions. Let it simmer while preparing the rest of the ingredients.

  2. Add red chilies to the hot pot if desired.

  3. Wash and prepare vegetables, slicing and chopping larger vegetables into bite-sized pieces. Do not cook. Arrange them on a large plate or tray and place on the table, along with communal serving utensils (long cooking chopsticks, tongs, and/or a hot pot strainer).

  4. Unbox and place Mori-Nu Silken Tofu on a plate on the table, along with a spoon for scooping.

  5. Prepare small individual bowls of dipping sauces for each person and place on table.

  6. Using the communal serving utensils, each person should cook small batches of their desired vegetables in the hot pot, retrieving them for their own individual bowl once cooked. Tougher vegetables should be added first and allowed to cook longer.

  7. Tofu can be enjoyed warm by scooping thin pieces directly into each person's bowl and letting it warm alongside the other ingredients with a bit of broth. No need to cook Mori-Nu in the communal hot pot since it is shelf-stable and ready to eat.

  8. Enjoy the dipping sauces with each bite, and at the end of the meal, the broth can be ladled into each person's bowl for a savory finish!

TIPS


  • Vegetables and add-ins can be prepared in advance and kept in the refrigerator until ready to serve.

  • Use a hot pot or a shabu-shabu pot with its own built-in heating element for convenience.

  • Alternatively, a Dutch oven pot can be placed on top of a portable burner. Ideally, the pot is wide but not too tall, making it easier to see the ingredients as they cook.

  • Remember not to use any plastic utensils as they can melt in the hot soup. Wooden and metal are best for hot pot.

  • Cook as you eat; don't overcrowd the pot with ingredients all at once.

  • Adjust the heat as needed with the amount of ingredients in the broth.

  • Hot pot is a very flexible recipe that can be adjusted as you eat. Want more broth? Add another packet of soup base and water to the same pot and let it boil again. Running out of other ingredients but still have broth and hungry people? Bring out more veggies and tofu!
